- 1/2 cup heavy cream

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat eggs and mix in oil and vanilla extract.
- Combine the wet and dry ingredients until just mixed. Fold in apples and pecans.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- While the cake cools, prepare the caramel glaze. Melt butter in a saucepan over medium heat.
- Add brown sugar and heavy cream to the melted butter, stirring constantly until the mixture comes to a boil.
- Boil for 3-5 minutes without stirring, then remove from heat and stir in vanilla extract.
- Drizzle the warm caramel glaze over the cooled cake before serving.

- Feel free to add raisins or dried cranberries for added texture.
- For a decorative touch, reserve some pecans to sprinkle on top of the glaze.
