Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla, mixing until combined.
- Gradually incorporate the dry ingredients into the wet mixture.
- For the filling, combine diced apples, lemon juice, cornstarch, butter, and cinnamon in a saucepan. Cook over medium heat until apples soften.
- Chill the apple filling in the refrigerator for 30 minutes.
- Drop tablespoon-sized balls of cookie dough onto a baking sheet.
- Bake for 12-15 minutes or until edges are golden.
- Allow cookies to cool completely on a wire rack.
- Once cooled, spread a spoonful of apple filling on one cookie and top with another to form a sandwich.
