  • 2 large eggs

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together applesauce, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, sift together flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. If desired, fold in chopped walnuts.
  6. Distribute the batter evenly into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
