Ingredients

- 2 cups fresh apricots, pitted and sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine apricots, sugar, lemon juice, and vanilla. Set aside.
- In another bowl, whisk flour, baking powder, and salt.
- Add melted butter and milk to the dry ingredients. Mix until just combined.
- Pour the apricot mixture into a greased baking dish.
- Drop spoonfuls of the batter over the apricot mixture.
- Bake for 30-35 minutes, or until the top is golden brown.
- Let cool before serving.
Notes
- Serve warm with vanilla ice cream.
- You can substitute peaches for apricots.
