  • 1 inch ginger, grated
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add sesame oil and sauté garlic and ginger until fragrant.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add carrots and cook for 3 minutes.
  5. Stir in shiitake mushrooms and bok choy, cooking for an additional 3 minutes.
  6. Add snow peas and soy sauce, cooking for 2 more minutes.
  7. Season with salt and pepper to taste.
  8. Remove from heat and garnish with green onions before serving.
