Ingredients

- 4 cups vegetable broth
- 1 cup bok choy, chopped
- 1 cup shiitake mushrooms, sliced
- 1 cup carrots, julienned
- 1 cup snow peas
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add sesame oil and sauté garlic and ginger until fragrant.
- Pour in the vegetable broth and bring to a simmer.
- Add carrots and cook for 3 minutes.
- Stir in shiitake mushrooms and bok choy, cooking for an additional 3 minutes.
- Add snow peas and soy sauce, cooking for 2 more minutes.
- Season with salt and pepper to taste.
- Remove from heat and garnish with green onions before serving.
Notes
- For a spicier version, add sliced chili peppers.
- You can substitute vegetable broth with chicken broth for a non-vegetarian option.
- Consider adding tofu for extra protein.
