- 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup potato, peeled and diced

- 1/2 cup heavy cream (optional)

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add asparagus and potato, cook for 5 minutes.
- Pour in vegetable broth, bring to a boil.
- Reduce heat, simmer for 15 minutes until vegetables are tender.
- Blend the soup until smooth using an immersion blender or stand blender.
- If desired, stir in heavy cream and heat through.
