Instructions

  1. Prepare a 9-inch springform pan by greasing the sides.
  2. In a bowl, combine graham cracker crumbs and melted butter until well mixed.
  3. Press the mixture firmly into the bottom of the springform pan to form the crust.
  4. In a mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  5. Add the Baileys and vanilla extract to the cream cheese mixture, mixing until fully incorporated.
  6. In a separate bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until combined.
  8. Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula.
  9. Refrigerate for at least 4 hours or until set.
  10. Before serving, dust the top with cocoa powder and garnish with chocolate shavings.
