- 6 cups day-old bread, cubed
- 4 ripe bananas, mashed
- 4 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cubed bread and mashed bananas.
- In another bowl, whisk together the eggs, milk, cream, sugar, vanilla, cinnamon, and salt until smooth.
- Pour the egg mixture over the bread and banana mixture. Ensure all bread is soaked.
- If using, fold in the chopped walnuts.
- Transfer the mixture to a greased baking dish.
- Bake for 45-50 minutes, or until the top is golden brown and a knife inserted comes out clean.
- Let it cool slightly before serving.
Notes
- For a richer flavor, use brioche or challah bread.
- Serve warm with a drizzle of caramel sauce or a scoop of vanilla ice cream.
- You can add raisins or chocolate chips for variation.
