- 4 ripe bananas, mashed
- 6 cups day-old brioche bread, cubed
- 4 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the mashed bananas, eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt. Whisk until smooth.
- Fold in the cubed brioche bread and walnuts, ensuring all pieces are soaked.
- Let the mixture sit for 15 minutes to allow the bread to absorb the liquid.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Bake for 45-50 minutes or until the top is golden brown and a knife inserted comes out clean.
- Allow to cool slightly before serving. Optionally, serve with a drizzle of caramel sauce.
Notes
- For a richer flavor, use chocolate brioche or add chocolate chips.
- Consider serving with whipped cream or a scoop of vanilla ice cream.
- Adjust sugar according to the sweetness of the bananas.
