Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, cream the butter and sugar until light and fluffy.
  3. Add eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk.
  6. Fold in the mashed bananas and vanilla extract until well combined.
  7. Pour the batter evenly into the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
  10. Once cooled, spread a layer of vanilla pudding on top of one cake layer.
  11. Add a layer of whipped cream and crushed vanilla wafers, then top with the second cake layer.
  12. Frost the top and sides with the remaining whipped cream and garnish with additional crushed wafers and banana slices.
