- 1/2 cup buttermilk
- 1 cup vanilla pudding mix
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5 inch loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a mixer, cream the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the mashed bananas and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk.
- Fold in the vanilla pudding mix until combined.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Use very ripe bananas for better flavor.
- Try adding chopped nuts or chocolate chips for variation.
- This cake can be served with whipped cream or fresh banana slices as garnish.
