- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup corn, grilled or canned
- 1/2 cup black beans, rinsed and drained
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup BBQ sauce
- 1/4 cup ranch dressing
- 1 avocado, sliced
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken with salt and pepper, then grill until fully cooked, about 6-7 minutes per side.
- Remove the chicken from the grill and let it rest for 5 minutes before shredding.
- In a large bowl, combine the mixed greens, cherry tomatoes, red onion, corn, black beans, and cheese.
- Add the shredded chicken and drizzle with BBQ sauce and ranch dressing.
- Toss gently to combine.
- Plate the salad and top with sliced avocado.
