Ingredients

  • 1 lb beef sirloin, sliced thin
  • 8 oz egg noodles
  • 2 cups beef broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large pan, heat vegetable oil over medium-high heat.
  3. Add the beef slices and sear until browned, about 3-4 minutes.
  4. Remove the beef and set aside. In the same pan, add onions, garlic, and mushrooms. Sauté until softened.
  5. Return the beef to the pan. Add beef broth and soy sauce. Bring to a simmer.
  6. Mix cornstarch with a little water and stir into the sauce to thicken.
  7. Add the cooked noodles and toss to combine. Adjust seasoning with salt and pepper.
  8. Serve hot, garnished with green onions if desired.
