Description
A hearty beef enchilada bake layered with tortillas, seasoned beef, and cheese.
Ingredients

- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add diced onion and garlic to the skillet, sauté until softened.
- Stir in enchilada sauce, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
- In a baking dish, spread a thin layer of the beef mixture.
- Layer 4 corn tortillas over the beef, followed by half of the remaining beef mixture and half of the black beans.
- Sprinkle 1 cup of cheddar cheese over the layer.
- Repeat with remaining tortillas, beef mixture, beans, and top with remaining cheese.
- Bake uncovered for 25-30 minutes until cheese is melted and bubbly.
- Let it rest for 10 minutes before serving.
Notes
- For added flavor, use smoked paprika.
- Variations include adding diced bell peppers or jalapeños.
- Top with fresh cilantro or sour cream before serving.
