Description

A hearty beef enchilada bake layered with tortillas, seasoned beef, and cheese.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add diced onion and garlic to the skillet, sauté until softened.
  4. Stir in enchilada sauce, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
  5. In a baking dish, spread a thin layer of the beef mixture.
  6. Layer 4 corn tortillas over the beef, followed by half of the remaining beef mixture and half of the black beans.
  7. Sprinkle 1 cup of cheddar cheese over the layer.
  8. Repeat with remaining tortillas, beef mixture, beans, and top with remaining cheese.
  9. Bake uncovered for 25-30 minutes until cheese is melted and bubbly.
  10. Let it rest for 10 minutes before serving.

Notes

  • For added flavor, use smoked paprika.
  • Variations include adding diced bell peppers or jalapeños.
  • Top with fresh cilantro or sour cream before serving.
