Description

A hearty and flavorful beef enchilada casserole layered with tortillas, seasoned beef, and cheese.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add chopped onion and minced garlic. Sauté until translucent.
  4. Stir in enchilada sauce, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
  5. In a baking dish, layer 3 tortillas, half of the beef mixture, half of the black beans, and 1 cup of cheese.
  6. Repeat the layering with 3 more tortillas, the remaining beef mixture, remaining black beans, and 1 cup of cheese.
  7. Top with the last 2 tortillas and remaining cheese.
  8. Bake uncovered for 25-30 minutes or until cheese is bubbly and golden.
  9. Let it rest for 10 minutes before serving.

Notes

  • For a spicier dish, add diced jalapeños to the beef mixture.
  • You can substitute ground turkey for a lighter option.
  • Garnish with fresh cilantro or sour cream before serving.
