Description
A hearty and flavorful beef enchilada casserole layered with tortillas, seasoned beef, and cheese.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic. Sauté until translucent.
- Stir in enchilada sauce, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
- In a baking dish, layer 3 tortillas, half of the beef mixture, half of the black beans, and 1 cup of cheese.
- Repeat the layering with 3 more tortillas, the remaining beef mixture, remaining black beans, and 1 cup of cheese.
- Top with the last 2 tortillas and remaining cheese.
- Bake uncovered for 25-30 minutes or until cheese is bubbly and golden.
- Let it rest for 10 minutes before serving.
Notes
- For a spicier dish, add diced jalapeños to the beef mixture.
- You can substitute ground turkey for a lighter option.
- Garnish with fresh cilantro or sour cream before serving.
