Description

A classic beef enchilada recipe featuring seasoned ground beef wrapped in corn tortillas, topped with a rich enchilada sauce and cheese, then baked to perfection.

Ingredients

Scale
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 10 corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Chopped cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat. Add the onions and garlic, cooking until the onions are translucent.
  3. Stir in the cumin, chili powder, salt, and pepper. Cook for another 2 minutes.
  4. Warm the tortillas in a dry skillet or microwave to make them pliable.
  5. Spoon a portion of the beef mixture onto each tortilla, roll them up, and place them seam side down in a baking dish.
  6. Pour the enchilada sauce over the rolled tortillas, ensuring they are fully covered.
  7. Sprinkle the shredded cheese over the top.
  8. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro before serving.

Notes

  • You can substitute ground turkey for a lighter option.
  • For a spicier version, add diced jalapeños to the beef mixture.
  • Experiment with different types of cheese for varied flavor profiles.
