  • 2 carrots, diced
  • 2 celery sticks, diced
  • 200ml dry sherry
  • 400g canned chopped tomatoes
  • 1 tablespoon tomato paste
  • 500ml beef stock
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large casserole dish over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Incorporate carrots and celery, cooking for another 5 minutes.
  4. Add beef mince, breaking it up as it browns.
  5. Pour in the sherry, scraping the bottom to deglaze.
  6. Stir in chopped tomatoes and tomato paste.
  7. Add beef stock, thyme, bay leaf, salt, and pepper.
  8. Bring to a simmer, then cover and reduce heat to low.
  9. Cook for 1.5 to 2 hours, stirring occasionally.
  10. Remove bay leaf and adjust seasoning as needed.
  11. Garnish with fresh parsley before serving.
