- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery sticks, diced
- 200ml dry sherry
- 400g canned chopped tomatoes
- 1 tablespoon tomato paste
- 500ml beef stock
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large casserole dish over medium heat.
- Add onion and garlic, sauté until translucent.
- Incorporate carrots and celery, cooking for another 5 minutes.
- Add beef mince, breaking it up as it browns.
- Pour in the sherry, scraping the bottom to deglaze.
- Stir in chopped tomatoes and tomato paste.
- Add beef stock, thyme, bay leaf, salt, and pepper.
- Bring to a simmer, then cover and reduce heat to low.
- Cook for 1.5 to 2 hours, stirring occasionally.
- Remove bay leaf and adjust seasoning as needed.
- Garnish with fresh parsley before serving.
