- 1 lb ground beef
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup enchilada sauce
- 8 large flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, brown the ground beef over medium heat, breaking it apart with a spoon.
- Add the diced onion and minced garlic. Cook until the onion is translucent.
- Stir in the black beans, corn, cumin, smoked paprika, salt, and pepper. Cook for another 5 minutes.
- Spread a layer of enchilada sauce on the bottom of a baking dish.
- Place a tortilla on a flat surface. Add a portion of the beef mixture and a sprinkle of cheese. Roll it up tightly and place it seam side down in the baking dish.
- Repeat with the remaining tortillas and filling.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Let it cool slightly before serving.
Notes
- You can substitute ground turkey or chicken for a leaner option.
- Add diced bell peppers for extra flavor and texture.
- Top with fresh cilantro or avocado for garnish.
