Ingredients

  • 1 lb ground beef
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup enchilada sauce
  • 8 large flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat, breaking it apart with a spoon.
  3. Add the diced onion and minced garlic. Cook until the onion is translucent.
  4. Stir in the black beans, corn, cumin, smoked paprika, salt, and pepper. Cook for another 5 minutes.
  5. Spread a layer of enchilada sauce on the bottom of a baking dish.
  6. Place a tortilla on a flat surface. Add a portion of the beef mixture and a sprinkle of cheese. Roll it up tightly and place it seam side down in the baking dish.
  7. Repeat with the remaining tortillas and filling.
  8. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  9. Bake for 20-25 minutes until the cheese is melted and bubbly.
  10. Let it cool slightly before serving.
