- 1 tablespoon Dijon mustard
- 1 cup beef broth
- 1 tablespoon cornstarch (optional, for thickening)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the beef on all sides until browned, about 3-4 minutes per side.
- Add minced garlic and chopped rosemary to the skillet, and cook for 1 minute.
- Transfer the skillet to the oven and roast for 20-25 minutes for medium-rare.
- Remove the beef and let it rest for 10 minutes.
- In the same skillet, add balsamic vinegar and Dijon mustard, scraping the fond from the bottom.
- Add beef broth and bring to a simmer.
- If desired, mix cornstarch with a little water and add to thicken the sauce.
- Slice the beef and serve drizzled with sauce.
