  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides.
  2. Remove beef and set aside. In the same pot, add onions and garlic; sauté until soft.
  3. Add carrots and potatoes; cook for 5 minutes.
  4. Stir in tomato paste, thyme, and bay leaf.
  5. Return beef to the pot; pour in beef broth and red wine.
  6. Bring mixture to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours.
  7. Season with salt and pepper before serving.

Notes

  • For a thicker stew, mix 2 tablespoons of flour with cold water and stir into the stew during the last 30 minutes of cooking.
