- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides.
- Remove beef and set aside. In the same pot, add onions and garlic; sauté until soft.
- Add carrots and potatoes; cook for 5 minutes.
- Stir in tomato paste, thyme, and bay leaf.
- Return beef to the pot; pour in beef broth and red wine.
- Bring mixture to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours.
- Season with salt and pepper before serving.
Notes
- For a thicker stew, mix 2 tablespoons of flour with cold water and stir into the stew during the last 30 minutes of cooking.
- Consider adding mushrooms for extra flavor.
- Serve with crusty bread for a complete meal.
