Beef Skillet Enchiladas are a quick and flavorful dish that combines seasoned ground beef with tortillas, cheese, and a rich sauce, all cooked in one skillet.

- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and sauté until translucent.
- Stir in garlic and cook for an additional minute.
- Add ground beef, cumin, chili powder, salt, and pepper. Cook until the beef is browned.
- Stir in black beans and half of the enchilada sauce. Mix well.
- Warm tortillas briefly in another skillet or microwave until pliable.
- Fill each tortilla with beef mixture, roll them up, and place seam-side down in the skillet.
- Pour remaining enchilada sauce over the rolled tortillas.
- Sprinkle shredded cheese on top.
- Cover the skillet and cook on low heat until cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier version, add diced jalapeños to the beef mixture.
- You can use flour tortillas instead of corn for a different texture.
- Serve with sour cream or guacamole for added flavor.
