Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Brown the beef cubes on all sides for enhanced flavor.
- Transfer the beef to the crock pot.
- Add diced potatoes, sliced carrots, chopped onion, and minced garlic.
- Stir in beef broth, tomato paste, thyme, rosemary, and bay leaves.
- Season with salt and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove bay leaves before serving.
Notes
- For a thicker stew, mix 2 tbsp cornstarch with 2 tbsp cold water and stir into the stew during the last hour of cooking.
- Consider adding mushrooms or peas for extra texture.
- Serve with crusty bread for a complete meal.
