Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Brown the beef cubes on all sides for enhanced flavor.
  3. Transfer the beef to the crock pot.
  4. Add diced potatoes, sliced carrots, chopped onion, and minced garlic.
  5. Stir in beef broth, tomato paste, thyme, rosemary, and bay leaves.
  6. Season with salt and pepper.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Remove bay leaves before serving.

Notes

  • For a thicker stew, mix 2 tbsp cornstarch with 2 tbsp cold water and stir into the stew during the last hour of cooking.
