A decadent berrylicious strawberry crunch cheesecake that combines creamy cheesecake with a crunchy topping.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1 cup fresh strawberries, pureed
- 1/4 cup powdered sugar
- 1/2 cup crushed freeze-dried strawberries
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and granulated sugar until smooth.
- Add vanilla extract and mix until well combined.
- Incorporate eggs one at a time, mixing after each addition.
- Fold in sour cream and strawberry puree until combined.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
- Top with powdered sugar and crushed freeze-dried strawberries before serving.
Notes
- For a chocolate variation, add cocoa powder to the crust.
- For a berry topping, use mixed berries instead of only strawberries.
- Consider using a water bath for a creamier texture.
