Ingredients

- 2 lbs of beef chuck roast
- 1 tablespoon of salt
- 1 teaspoon of black pepper
- 2 tablespoons of olive oil
- 1 onion, chopped
- 4 cloves of garlic, minced
- 4 carrots, sliced
- 3 potatoes, cubed
- 4 cups of beef broth
- 2 tablespoons of Worcestershire sauce
- 1 teaspoon of dried thyme
- 1 bay leaf
Instructions
- Preheat the oven to 350°F (175°C).
- Season the beef roast with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat.
- Sear the beef on all sides until browned, about 4-5 minutes per side.
- Remove the beef and set aside. Add onions and garlic to the pot, sauté until softened.
- Add carrots and potatoes, stirring for 2 minutes.
- Return the beef to the pot. Pour in beef broth, Worcestershire sauce, thyme, and add the bay leaf.
- Bring to a simmer, cover, and transfer to the oven.
- Bake for 3 hours or until the beef is fork-tender.
- Remove the bay leaf before serving.
Notes
- For a richer flavor, add red wine to the broth.
- Serve with crusty bread for dipping.
- This dish can be made a day in advance and reheated.
