Ingredients

  • 2 lbs of beef chuck roast
  • 1 tablespoon of salt
  • 1 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 4 cups of beef broth
  • 2 tablespoons of Worcestershire sauce
  • 1 teaspoon of dried thyme
  • 1 bay leaf

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the beef roast with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat.
  4. Sear the beef on all sides until browned, about 4-5 minutes per side.
  5. Remove the beef and set aside. Add onions and garlic to the pot, sauté until softened.
  6. Add carrots and potatoes, stirring for 2 minutes.
  7. Return the beef to the pot. Pour in beef broth, Worcestershire sauce, thyme, and add the bay leaf.
  8. Bring to a simmer, cover, and transfer to the oven.
  9. Bake for 3 hours or until the beef is fork-tender.
  10. Remove the bay leaf before serving.

Notes

  • For a richer flavor, add red wine to the broth.
  • Serve with crusty bread for dipping.
  • This dish can be made a day in advance and reheated.
