Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix panko breadcrumbs, parsley, dill, lemon zest, salt, and pepper.
- Brush the salmon fillets with Dijon mustard.
- Press the breadcrumb mixture onto the top of each fillet.
- Place the salmon on a baking sheet lined with parchment paper.
- Arrange asparagus and cherry tomatoes around the salmon.
- Drizzle olive oil over vegetables and season with salt and pepper.
- Bake for 15-20 minutes or until the salmon is cooked through.
- Drizzle balsamic glaze over the vegetables before serving.
- Plate the salmon with vegetables, garnishing with additional herbs if desired.
