Description

Ingredients

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups pitted cherries (fresh or canned)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/4 cup cherry liqueur (optional)
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until well combined. The batter will be thin.
  5. Pour batter evenly into prepared pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for 10 minutes, then remove to wire racks to cool completely.
  8. Once cooled, slice each cake in half horizontally.
  9. Place one layer on a serving platter. Moisten with cherry liqueur if using.
  10. Spread a layer of cherries and whipped cream on top.
  11. Add the second layer and repeat the process until all layers are stacked.
  12. Frost the top and sides of the cake with whipped cream.
  13. Garnish with chocolate shavings and remaining cherries.

  • For a richer flavor, use dark chocolate cocoa powder.
  • Experiment with different types of liqueurs for varied taste.
