Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 2 cups fresh blueberries

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine melted butter, eggs, and milk. Mix well.
  4. Pour wet ingredients into dry ingredients. Stir until just combined.
  5. Gently fold in blueberries.
  6. Line a muffin tin with paper liners and fill each cup 2/3 full with batter.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the tin for 5 minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, add an extra 1/4 cup of sugar.
  • For a lemon flavor, add the zest of one lemon to the batter.
