Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a mixing bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually add dry ingredients to the butter mixture, alternating with milk and vanilla.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Once cooled, slice each cake horizontally to create layers.
  11. Fill the bottom layer with pastry cream, then place the second layer on top.
  12. For the ganache, heat heavy cream until just simmering, then pour over chopped chocolate. Stir until smooth.
  13. Pour ganache over the top layer, allowing it to drip down the sides.
  14. Chill the cake until ganache is set before serving.
