Description
A classic Boston cream cake featuring layers of sponge cake, rich pastry cream, and a glossy chocolate ganache.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 2 ½ tsp baking powder
- 1 tsp vanilla extract
- ½ tsp salt
- 2 cups pastry cream
- 1 cup semisweet chocolate, chopped
- ½ cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a mixing bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the butter mixture, alternating with milk and vanilla.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- Once cooled, slice each cake horizontally to create layers.
- Fill the bottom layer with pastry cream, then place the second layer on top.
- For the ganache, heat heavy cream until just simmering, then pour over chopped chocolate. Stir until smooth.
- Pour ganache over the top layer, allowing it to drip down the sides.
- Chill the cake until ganache is set before serving.
Notes
- For added flavor, consider infusing the milk with vanilla beans.
- Use a serrated knife for even slicing of the cake layers.
- For variations, incorporate fresh berries between the layers or serve with whipped cream.
