  • 1 cup pastry cream
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs, one at a time, mixing well after each addition.
  4. In another bowl, combine flour, baking powder, and salt. Gradually add to the creamed mixture, alternating with milk.
  5. Stir in vanilla extract. Pour the batter into the prepared pan.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool.
  7. Prepare the pastry cream: In a saucepan, heat milk until just boiling. In a bowl, whisk eggs and sugar, then slowly add hot milk. Return to the pan, cooking until thickened.
  8. Once cooled, fill the cake with pastry cream.
  9. For the ganache, heat cream until simmering, then pour over chopped chocolate. Stir until smooth.
  10. Pour ganache over the filled cake, letting it drip down the sides.
