Ingredients

  • 8 oz boursin cheese
  • 2 cups spinach, fresh
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Boil water in a large pot and cook the pasta according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add spinach and cherry tomatoes to the skillet. Cook until spinach wilts and tomatoes soften.
  4. Reduce heat and add boursin cheese to the skillet, stirring until melted and combined.
  5. Drain the pasta, reserving a bit of pasta water. Add pasta to the skillet, tossing to combine.
  6. If needed, add reserved pasta water to reach desired consistency.
  7. Season with salt and pepper. Serve immediately, garnished with Parmesan cheese.
