- 12 oz pasta of your choice
- 8 oz boursin cheese
- 2 cups spinach, fresh
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Boil water in a large pot and cook the pasta according to package instructions until al dente.
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add spinach and cherry tomatoes to the skillet. Cook until spinach wilts and tomatoes soften.
- Reduce heat and add boursin cheese to the skillet, stirring until melted and combined.
- Drain the pasta, reserving a bit of pasta water. Add pasta to the skillet, tossing to combine.
- If needed, add reserved pasta water to reach desired consistency.
- Season with salt and pepper. Serve immediately, garnished with Parmesan cheese.
Notes
- Try adding grilled chicken or shrimp for extra protein.
- Experiment with different vegetables like bell peppers or zucchini.
- For a spicier version, add red pepper flakes.
