Instructions
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are acceptable.
- Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Repeat with remaining batter.
- Serve pancakes warm, topped with fresh berries and drizzled with maple syrup.
Notes
- For a richer flavor, use buttermilk instead of regular milk.
- You can add chocolate chips or nuts to the batter for variations.
- Serve with whipped cream for an extra indulgence.
