Instructions
- In a bowl, whisk together the eggs and milk until well combined.
- Stir in the cheese, bell pepper, spinach, salt, and pepper.
- Heat a non-stick skillet over medium heat and pour in the egg mixture.
- Cook until the edges begin to set, then gently stir with a spatula.
- Once cooked through, remove from heat and place on a whole grain wrap.
- Roll the wrap tightly and slice in half.
- Serve warm, optionally with salsa or hot sauce.
Notes
- Customize with your choice of vegetables or proteins.
- For a spicier version, add diced jalapeños.
