Ingredients

- 1 lb sirloin steak, cut into 1-inch cubes
- 4 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat a cast iron skillet over medium-high heat.
- Season the steak cubes with salt and pepper.
- Add 2 tablespoons of butter to the skillet.
- Once the butter is melted and bubbling, add the steak cubes in a single layer.
- Sear the steak for 2-3 minutes per side for medium-rare.
- In the last minute of cooking, add garlic, thyme, and rosemary to the skillet.
- Add the remaining butter and baste the steak bites with the melted butter.
- Remove from heat and let rest for 5 minutes before serving.
Notes
- For a more intense flavor, marinate the steak in garlic and herbs for a few hours.
- Serve with crusty bread to soak up the butter.
- Try adding a splash of red wine to deglaze the skillet after cooking.
