Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat a cast iron skillet over medium-high heat.
  2. Season the steak cubes with salt and pepper.
  3. Add 2 tablespoons of butter to the skillet.
  4. Once the butter is melted and bubbling, add the steak cubes in a single layer.
  5. Sear the steak for 2-3 minutes per side for medium-rare.
  6. In the last minute of cooking, add garlic, thyme, and rosemary to the skillet.
  7. Add the remaining butter and baste the steak bites with the melted butter.
  8. Remove from heat and let rest for 5 minutes before serving.

Notes

  • For a more intense flavor, marinate the steak in garlic and herbs for a few hours.
  • Serve with crusty bread to soak up the butter.
  • Try adding a splash of red wine to deglaze the skillet after cooking.
