Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the halved baby potatoes with olive oil, thyme, rosemary, salt, and pepper.
- Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until golden brown and tender.

- Add 2 tbsp of butter to the skillet and allow it to melt.
- Season the steak bites with salt and pepper, then add them to the skillet in a single layer.
- Sear the steak bites for 2-3 minutes on each side, achieving a nice crust.
- Add minced garlic and remaining butter to the skillet, basting the steak bites with the melted butter for extra flavor.
- Cook for an additional 1-2 minutes, ensuring the steak reaches your desired doneness.
- Serve the steak bites alongside the roasted garlic herb potatoes.
