Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, garlic, and celery, sautéing until soft.
- Add carrots and cook for an additional 5 minutes.
- Stir in chopped cabbage and cook until slightly wilted.
- Add diced tomatoes, vegetable broth, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 30-35 minutes.
- Stir in lemon juice before serving.
