Ingredients

  • 8 oz fettuccine pasta
  • 2 chicken breasts, sliced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions. Drain and set aside.
  2. In a bowl, toss the sliced chicken with Cajun seasoning.
  3. Heat olive oil in a skillet over medium heat. Add the seasoned chicken and cook until browned and cooked through, about 6-8 minutes.
  4. Add minced garlic and cherry tomatoes to the skillet. Sauté for 2-3 minutes until the tomatoes soften.
  5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  6. Add the cooked fettuccine to the skillet and toss to coat in the sauce.
  7. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
