- 8 oz fettuccine pasta
- 2 chicken breasts, sliced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Cook the fettuccine according to package instructions. Drain and set aside.
- In a bowl, toss the sliced chicken with Cajun seasoning.
- Heat olive oil in a skillet over medium heat. Add the seasoned chicken and cook until browned and cooked through, about 6-8 minutes.
- Add minced garlic and cherry tomatoes to the skillet. Sauté for 2-3 minutes until the tomatoes soften.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
- Add the cooked fettuccine to the skillet and toss to coat in the sauce.
- Season with salt and pepper to taste. Garnish with chopped green onions before serving.

- You can adjust the spiciness by varying the amount of Cajun seasoning.
- Consider adding bell peppers or spinach for extra flavor and color.
