Ingredients

- 2 lbs beef stew meat, cut into 1-inch pieces
- 4 cups beef broth
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons dried thyme
- 1 teaspoon black pepper
- 2 tablespoons Worcestershire sauce
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Sear the beef until browned on all sides.
- Transfer the beef to the crockpot.
- Add potatoes, carrots, onion, and garlic to the crockpot.
- Pour in the beef broth and add Worcestershire sauce, thyme, and black pepper.
- Stir to combine all ingredients.
- Set the crockpot on low and cook for 8 hours or high for 4 hours.
- Check for tenderness and adjust seasoning as needed before serving.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with water and add it in the last hour of cooking.
- You can substitute beef with chicken or pork.
- Add peas or corn for additional vegetables.
