- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter, softened
- 1 egg yolk
- 1/4 cup white wine
- 2 cups ricotta cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
- Oil for frying
Instructions
- In a bowl, combine flour, sugar, and salt. Add butter and mix until crumbly.
- In another bowl, whisk egg yolk and wine. Gradually mix into dry ingredients until a dough forms.
- Knead the dough on a floured surface until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.
- Roll out the dough to 1/8 inch thickness. Cut into 4-inch circles.
- Wrap each circle around a cannoli tube and seal the edges with water.
- Heat oil in a deep pan to 350°F. Fry the wrapped tubes until golden brown, about 2-3 minutes.
- Remove shells and drain on paper towels. Let cool.
- In a separate bowl, mix ricotta, powdered sugar, and vanilla until smooth. Fold in chocolate chips.
- Pipe the ricotta mixture into cooled shells.
- Dust with powdered sugar before serving.
