Ingredients

  • 2 cups all-purpose flour
  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts (optional)
  • 1 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, mix the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the granulated sugar, brown sugar, eggs, oil, and vanilla until well combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the grated carrots, walnuts, and raisins if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan before cutting into bars.

Notes

  • For a cream cheese frosting, beat together 8 oz cream cheese, 1/2 cup butter, and 3 cups powdered sugar until smooth.
  • You can add pineapple for a tropical twist.
  • Store bars in an airtight container for up to one week.
