- 2 cups all-purpose flour
- 2 cups grated carrots
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup chopped walnuts (optional)
- 1 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, mix the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the granulated sugar, brown sugar, eggs, oil, and vanilla until well combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the grated carrots, walnuts, and raisins if using.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan before cutting into bars.
Notes
- For a cream cheese frosting, beat together 8 oz cream cheese, 1/2 cup butter, and 3 cups powdered sugar until smooth.
- You can add pineapple for a tropical twist.
- Store bars in an airtight container for up to one week.
