- 8 oz. penne pasta
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup chopped spinach
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cook penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, sauté garlic and mushrooms in olive oil until tender.
- Add chopped spinach and cook until wilted.
- In a large bowl, combine cooked pasta, marinara sauce, ricotta cheese, oregano, salt, and pepper.
- Layer half of the pasta mixture in a greased baking dish.
- Sprinkle half of the mozzarella and Parmesan cheeses over the pasta.
- Add the remaining pasta mixture and top with the remaining cheeses.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
- Let the casserole cool for 5 minutes before serving.
Notes
- For a meat variation, add cooked ground beef or sausage.
- Experiment with different vegetables like bell peppers or zucchini.
- Garnish with fresh basil before serving for added flavor.
