Ingredients

  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup chopped spinach
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, sauté garlic and mushrooms in olive oil until tender.
  4. Add chopped spinach and cook until wilted.
  5. In a large bowl, combine cooked pasta, marinara sauce, ricotta cheese, oregano, salt, and pepper.
  6. Layer half of the pasta mixture in a greased baking dish.
  7. Sprinkle half of the mozzarella and Parmesan cheeses over the pasta.
  8. Add the remaining pasta mixture and top with the remaining cheeses.
  9. Bake for 25-30 minutes until the cheese is bubbly and golden.
  10. Let the casserole cool for 5 minutes before serving.
