- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1/2 cup diced onions
- 1/4 cup diced pickles
- 2 tablespoons ketchup
- 2 tablespoons mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef over medium heat, seasoning with garlic powder, onion powder, salt, and pepper.
- Drain excess fat and mix in diced onions, ketchup, and mustard; cook for another 2-3 minutes.
- Remove from heat and stir in pickles and half of the cheddar and mozzarella cheese.
- Heat a clean skillet over medium heat and place one tortilla in the pan.
- Spoon half of the beef mixture onto one half of the tortilla, then sprinkle with remaining cheese.
- Fold the tortilla over and cook for 3-4 minutes on each side, until golden brown and crispy.
- Repeat with the second tortilla and remaining filling.
- Slice the quesadillas into wedges and serve with additional pickles and condiments if desired.
Notes
- For a spicier version, add jalapeños to the beef mixture.
- You can use different types of cheese for varied flavors.
- Serve with salsa or guacamole for added flavor.
