- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 medium potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup milk
- 1 cup shredded cheddar cheese
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground beef, onion, and garlic. Cook until beef is browned.
- Stir in potatoes, carrots, and celery. Cook for 5 minutes.
- Add beef broth and Worcestershire sauce. Bring to a boil.
- Reduce heat and simmer until vegetables are tender, about 15 minutes.
- Stir in milk and cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with parsley.
