Ingredients

  • 1 whole chicken (34 lbs)
  • 4 cups chicken broth
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon parsley, chopped

Instructions

  1. In a large pot, bring chicken broth to a boil.
  2. Add whole chicken, reduce heat, and simmer for 1 hour until cooked through.
  3. Remove chicken, let cool, and shred meat, discarding bones and skin.
  4. In the same pot, sauté onions, carrots, celery, and garlic until softened.
  5. Add shredded chicken back to the pot.
  6. In a bowl, mix flour, milk, butter, thyme, salt, and pepper to form a dough.
  7. Drop spoonfuls of dough into the simmering broth.
  8. Cover and cook for 15 minutes until dumplings are fluffy.
  9. Garnish with parsley before serving.
