Ingredients

  • 1 chicken carcass
  • 2 medium onions, quartered
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, crushed
  • 10 cups water
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • Salt to taste
  • Fresh herbs (parsley, thyme) for garnish

Instructions

  1. Place the chicken carcass in a large stock pot.
  2. Add onions, carrots, celery, garlic, bay leaf, and peppercorns.
  3. Pour in the water and bring to a boil over high heat.
  4. Reduce heat and simmer for 2-3 hours, skimming off foam as necessary.
  5. Strain the broth through a fine mesh sieve into another pot.
  6. Discard solids and return the broth to the pot.
  7. Season with salt to taste.
  8. Serve hot, garnished with fresh herbs.
