Ingredients

- 2 cups cooked chicken, diced
- 1 cup celery, chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1 cup mixed greens for serving
Instructions
- In a mixing bowl, combine the diced chicken, celery, and red onion.
- In a separate bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Pour the dressing over the chicken mixture and stir to combine.
- Add the chopped parsley and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve on a bed of mixed greens.
Notes
- Use leftover rotisserie chicken for added flavor.
- For a lighter version, substitute Greek yogurt for mayonnaise.
