A hearty chicken stew featuring tender chicken, root vegetables, and a rich broth.
Ingredients

- 2 lbs chicken thighs, bone-in, skin-on
- 4 cups chicken broth
- 2 cups carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken with salt and pepper, then brown on all sides. Remove and set aside.
- Add onions, carrots, and celery to the pot. Sauté until softened.
- Stir in garlic, thyme, and rosemary, cooking for an additional minute.
- Return chicken to the pot and add chicken broth and bay leaves.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove chicken, shred the meat, and discard bones and skin.
- Add shredded chicken back to the pot, adjust seasoning, and stir in fresh parsley.
- Serve hot, garnished with additional parsley if desired.
Notes
- For a thicker stew, add a slurry of cornstarch and water.
- Variations can include adding potatoes or different herbs.
- Serve with crusty bread for dipping.
