- 4 large bell peppers
- 1 lb ground chicken
- 1 cup cooked rice
- 1 cup shredded cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp pepper
- 1 can diced tomatoes, drained
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat.
- Sauté diced onion and minced garlic until translucent.
- Add ground chicken, paprika, cumin, salt, and pepper. Cook until chicken is browned.
- Stir in cooked rice and diced tomatoes. Cook for an additional 2-3 minutes.
- Remove from heat and mix in 1/2 cup of shredded cheese.
- Stuff each bell pepper with the chicken mixture.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and top with remaining cheese.
- Bake for an additional 10 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- You can substitute ground turkey for chicken.
- Add jalapeños for a spicy kick.
- Experiment with different types of cheese for varied flavor.
