Ingredients

  • 4 large bell peppers
  • 1 lb ground chicken
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 can diced tomatoes, drained
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat.
  4. Sauté diced onion and minced garlic until translucent.
  5. Add ground chicken, paprika, cumin, salt, and pepper. Cook until chicken is browned.
  6. Stir in cooked rice and diced tomatoes. Cook for an additional 2-3 minutes.
  7. Remove from heat and mix in 1/2 cup of shredded cheese.
  8. Stuff each bell pepper with the chicken mixture.
  9. Place stuffed peppers in a baking dish and cover with foil.
  10. Bake for 30 minutes, then remove the foil and top with remaining cheese.
  11. Bake for an additional 10 minutes until cheese is melted and bubbly.
  12. Let cool for a few minutes before serving.

  • You can substitute ground turkey for chicken.
