Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine cornmeal, flour, baking powder, chili powder, cumin, salt, and black pepper.
- In another bowl, whisk together eggs, milk, and vegetable oil.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Spread half of the cornbread mixture in a greased pie dish.
- Layer the shredded chicken and cheese over the cornbread base.
- Pour the remaining cornbread mixture over the chicken and cheese.
- Bake for 30-35 minutes or until golden brown and a toothpick inserted comes out clean.
