- 2 large chicken breasts (about 1 pound)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 large tortillas
- 1 cup romaine lettuce, shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup ranch dressing or your choice of dressing
Instructions
- Preheat grill to medium-high heat.
- In a bowl, mix paprika, garlic powder, onion powder, salt, and pepper.
- Rub the spice mixture over the chicken breasts.
- Drizzle olive oil over the chicken to coat.
- Grill chicken for 6-7 minutes per side or until internal temperature reaches 165°F.
- Remove chicken from grill and let it rest for 5 minutes.
- Slice chicken into strips.
- Lay tortillas flat and layer with lettuce, sliced chicken, tomatoes, cucumber, cheese, and dressing.
- Wrap tightly and slice in half diagonally for serving.
