Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons sake
  • 2 tablespoons sugar
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • Green onions, for garnish
  • Skewers (bamboo or metal)

Instructions

  1. Cut chicken thighs into bite-sized pieces.
  2. Soak bamboo skewers in water for 30 minutes if using.
  3. In a saucepan, combine soy sauce, mirin, sake, sugar, ginger, and garlic. Bring to a boil and reduce heat to simmer until thickened, about 10 minutes.
  4. Thread chicken pieces onto skewers.
  5. Preheat grill to medium-high heat.
  6. Grill chicken skewers for 4-5 minutes on each side, basting with sauce.
  7. Remove from grill and let rest for a few minutes.
  8. Garnish with chopped green onions before serving.
