- 1 lb chicken thighs, boneless and skinless
- 1/4 cup soy sauce
- 1/4 cup mirin
- 2 tablespoons sake
- 2 tablespoons sugar
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
- Green onions, for garnish
- Skewers (bamboo or metal)
Instructions
- Cut chicken thighs into bite-sized pieces.
- Soak bamboo skewers in water for 30 minutes if using.
- In a saucepan, combine soy sauce, mirin, sake, sugar, ginger, and garlic. Bring to a boil and reduce heat to simmer until thickened, about 10 minutes.
- Thread chicken pieces onto skewers.
- Preheat grill to medium-high heat.
- Grill chicken skewers for 4-5 minutes on each side, basting with sauce.
- Remove from grill and let rest for a few minutes.
- Garnish with chopped green onions before serving.
Notes
- For extra flavor, marinate chicken in the sauce for 30 minutes before grilling.
